"It was my grandmother, Mary Theresa O'Keefe's, school journey from St. Mary's Residential School of Domestic Economy in Dunmanway. She would have been sent there for a year after school to learn how to become a good wife, essentially. It's full of recipes and theory of cooking – all handwritten with lots of corrections because the spelling isn't great. 'Rules for making and baking yeast bread', 'how to test pork if it's fresh', useful things you would need as a farmer's wife. Also I have her mass card which has a photo of her at 17, it's the only photo of her surviving. "
